For us, wine begins in the vineyard and so it is there where Laurent puts forth his focus and energy in order to first produce excellent, flavourful fruit that offer layers of complexity. Once that is successfully done, there is very little to do during the vinification process. In the winery, Laurent’s approach is to use only minimal interventions. For example, all our wines are bottled unfiltered, as every time you try to remove one thing, something else is taken out, which affects the complexity and true essence of the wines. It is by following this minimalist approach that Laurent is able to ensure each of our wines maintain their true expressions, while portraying inviting aromas with complex palates that linger on after you sip and finish with a pleasing acidity.
Reflecting our region’s cooler climate, we have chosen to specialize in traditional method sparkling wines; a natural choice as sparkling production utilizes grapes that are less ripe in order to maintain adequate levels of acidity and low alcohol content. Our ‘future-release’ offerings will range from Brut Nature (bone dry) to Doux (sweet) in white, rosé, and red. However, as these wines require aging, they will only begin to become available in late fall 2018. “Patience is a virtue”.
In addition to our sparkling crus, we also have a limited production of stainless steel-aged still wines, which include a selection of crisp, elegant whites and focused rosés. Please see below for availability and future release dates.
