70% Dornfelder; 20% L'Acadie; 10% La Crescent
Vineyard: Sustainably farmed on our estate plots planted in 2016-18 in alluvial soil.
Wine making:‍ ‍Dornfelder grapes were hand-harvested on October 15th at 18.5 brix, de-stemmed, crushed, then left to macerate on the skins for 24 hours before gently pressing. Fermented using only 'wild' ambient yeasts, the wines were then blended and bottled at 1.9 brix to allow fermentation to finish in the bottle. Aged 6 months on primary lees before being disgorged by hand, with no dosage, in May 2026.

Tasting Notes:‍ ‍Aromas of raspberry, black currant, and blood oranges. These notes carry through on the palate with tiny, delicate bubbles and a refreshing finish.
