100% Pinot Gris
Vineyard: Sustainably farmed on our 0.5 acre plot, planted in 2012 in alluvial soil.
Wine making: Hand-harvested on October 19th at 20.6 brix. Grapes were de-stemmed and crushed, then left to soak on the skins for 24 hours before being gently pressed. Fermented using only ambient yeasts in stainless steel. Bottled at 1.5 brix, allowing the final fermentation to occur in the bottle. Aged 8 months on the lees before being disgorged by hand in June, 2026 with no dosage.

Numbers: Alc./vol 11.9%; T.A. 6.2; pH 3.63; RS 6g/L
Tasting Notes: Aromas of fresh raspberry tart, rhubarb, and lime zest. On the palate, off-dry, with creamy, full-bodied notes of red berries, pastry, and a subtle citrus zest finish.
